BIG BAKES
A Simple Victoria Sponge Cake:
Ingredients:
175g of unsalted butter (at room temperature)
Golden caster sugar 175g
Self-raising flour 175g (sifted)
Baking powder 1tsp
Vanilla extract 1tsp
Eggs 3
Milk1-2 tbsp (optional)
Filling:
Strawberry jam
Double cream
Icing sugar for the top of the cake
METHOD:
- Heat he oven to 180 degrees and line some baking tins with butter and flour
- Beat all the cake ingredients together in a large bowl and add the milk if the mixture is too stiff to drop off the spoon when gently tapped.
- Divide the mixture in between two tins and make sure the tins are level
- Bake side by side in your preheated oven for 20-25 minutes until the sponge has risen nicely
- Leave to cool for 5 minutes to make sure the filling doesn’t melt
- Spread the jam on the sponge and then put the cream on top. After place the other cake on top and dust with icing sugar
