BIG BAKES

A Simple Victoria Sponge Cake:

Ingredients:

175g of unsalted butter (at room temperature)

Golden caster sugar 175g

Self-raising flour 175g  (sifted)

Baking powder 1tsp

Vanilla extract 1tsp

Eggs 3

Milk1-2 tbsp (optional)

Filling:

Strawberry jam

Double cream

Icing sugar for the top of the cake

 

METHOD:

  1. Heat he oven to 180 degrees and line some baking tins with butter and flour
  2. Beat all the cake ingredients together in a large bowl and add the milk if the mixture is too stiff to drop off the spoon when gently tapped.
  3. Divide the mixture in between two tins and make sure the tins are level
  4. Bake side by side in your preheated oven for 20-25 minutes until the sponge has risen nicely
  5. Leave to cool for 5 minutes to make sure the filling doesn’t melt
  6. Spread the jam on the sponge and then put the cream on top. After place the other cake on top and dust with icing sugar
