Prawn and Asparagus Stir Fry (283 calories per serving)

Ingredients:

  • Olive Oil
  • 1lb Shrimp
  • Salt
  • ½ tsp Chilli Flakes (optional)
  • 1 lb Asparagus
  • 1 tsp Garlic
  • 1 tsp Ginger
  • 1 tbsp Low Sodium Soy Sauce
  • 2 tbsp Lemon Juice

 

Instructions:

  • Put 2 tbsp Olive Oil into a pan.
  • Add the Shrimp to the pan and season with Salt. If you would like, add Chilli Flakes.
  • Cook until the Shrimp is pink and remove from pan.
  • Add another 2 tbsp of Olive Oil to the pan and put the lid on.
  • Bunch up all the Asparagus together on a chopping board and cut into thirds.
  • Add to pan and season with ginger, garlic and salt.
  • Mix together and add the shrimp to the pan.
  • Add the Soy Sauce, Lemon Juice, stir and remove from pan.
  • SERVE!!!
