Prawn and Asparagus Stir Fry (283 calories per serving)
Ingredients:
- Olive Oil
- 1lb Shrimp
- Salt
- ½ tsp Chilli Flakes (optional)
- 1 lb Asparagus
- 1 tsp Garlic
- 1 tsp Ginger
- 1 tbsp Low Sodium Soy Sauce
- 2 tbsp Lemon Juice
Instructions:
- Put 2 tbsp Olive Oil into a pan.
- Add the Shrimp to the pan and season with Salt. If you would like, add Chilli Flakes.
- Cook until the Shrimp is pink and remove from pan.
- Add another 2 tbsp of Olive Oil to the pan and put the lid on.
- Bunch up all the Asparagus together on a chopping board and cut into thirds.
- Add to pan and season with ginger, garlic and salt.
- Mix together and add the shrimp to the pan.
- Add the Soy Sauce, Lemon Juice, stir and remove from pan.
- SERVE!!!
